I believe it is a grille used to prepare meat at an Argentine asado or
barbecue party. Argentine musicians sometimes speak of playing music "a la
parilla" as if to say "play it lightly grilled on each side", a way of
saying to play with a certain relaxed freedom, somewhat by ear,
jam-band-style, rather than playing music strictly from charts.

Lois,

It's a large BBQ grill used for grilling meat.

The term is also used to describe a type of torture in
which the victim is given electric shocks while on
bare bedsprings, the "grill".

It is PARRILLA, not parilla.

From what I heard, "a la parrilla" In the old times of tango, the
orquestras where small and they did not need arrangements for the
different musicians so they all had the same copy of the music, this was
called "a la parrilla"; the parrilla is the grid used to cook the
barbacue.
When the orquestras become bigger they had to do the arrangements for
each musician, and no more playing "a la parrilla".
